We sailed on the Island Escape 5 years ago in the Med, on a 7 day cruise. We booked an inside cabin and ended up with an ocean view on deck 9.
Very informal, and because of that, very relaxing. No different from any other cruise line regarding service and amenities.
To be honest, I didn't really like most of the shows but that was 5 years ago, they must have improved by now.
The food was reasonable, plenty of choice, no reason to go hungry.
The excursions were pricey, but it doesn't matter which cruise line you go with, all the excursions are pricey.
Go to http://www.cruisecritic.com and read some of the comments about the Island Escape. You will get some hints and tips from people who have sailed on the ship more recently than us.
